Parsley Pesto

Ingredients:
1/2 olive oil
3 cloves garlic, chopped
6 cups fresh parlsey, chopped
1  jalapeño, chopped
1/2 tsp salt

Preparation:

Roughly chop parsley leaves and discard the stems. Place parsley, 1/2 cup olive oil, garlic cloves, and jalapeño in a food processor. Blend until the parsley mix becomes a fine pesto. Place parsley pesto in a bowl and season with salt. Note: this makes a lot of pesto, and you will not be sorry. I put it on everything now!
