Cayenne Kettle Corn

I don’t know about you, but sometimes I just need a snack. The only problem is that I can never seem to decide whether I’m craving something sweet or salty!

Well, this Fall I found myself in this exact predicament when my two guy friends came over for a midnight drink and chit chat on the porch. We were celebrating one of my best friend’s impending move to London, and needed an adventurous snack to go along with our High West Distillery Rendezvous Rye on ice.  In a pinch, I reached for a bag of organic popcorn and wished it was kettle corn instead. Waaaaait a second there! That was it! Spicy kettle corn!

The recipe that follows was gone in a matter of seconds, especially because George couldn’t wait until it cooled before he ate about half the pan….but I guess I can’t blame the London guy….

Cayenne Kettle Corn

1 bag popcorn, no butter added
¼ cup honey
½ stick unsalted butter
¼ tsp salt
1/8 tsp white pepper
1/8-1/4 tsp cayenne pepper

preparation

Preheat oven to 400°F. Popcorn in the microwave according to package instructions. Remove from bag and spread onto sheet pan. In small saucepan combine honey, butter, salt and pepper and cook over medium heat until butter is melted. Add cayenne pepper; stir. Remove from heat, and pour honey mixture over popcorn. Toss with tongs to coat (warning: honey will be VERY hot! Do not use hands!). Place popcorn in oven and cook for 15 minutes, flipping popcorn over once. Let cool slightly and enjoy warm.
